I've used a D200 for lots of weddings. First of all, I hope you are shooting in RAW mode. That gives you the most adjustability to images in Photoshop afterward. Also...set your camera to normal settings and don't do any in-camera sharpening or anything. I find all images from my D200 required a little bit of sharpening before printing but flat colours were never an issue. You could do some colour saturation adjustment in Photoshop. Try and load some examples where we can see them. It's hard to tell without seeing them...
